Pickled Beets

 Pickled Beets

Wash and cook beets until fork slides through easily.  Peel off skin under cool tap water.

In a clean pot, Add the brine:
2 cups of water
2 cups of vinegar
2 cups of sugar

Bring to a rolling boil 5 minutes.  Pour into hot, sterilized jars, and seal.
